Position Overview:
We are seeking a highly skilled and passionate Senior Bread & Pastry Baker to lead and manage our in-house bakery production. This is a hands-on leadership role for a well-rounded
artisan who excels in both bread and pastry—from naturally fermented sourdough loaves to perfectly laminated croissants. The ideal candidate combines technical baking expertise with strong organizational and costing skills to ensure consistent product quality, efficient production, and profitability.

Key Responsibilities:

  • Artisan Bread Production
    • Lead daily production of a wide range of breads: sourdough, baguettes, ciabatta, focaccia, brioche, etc.
    • Manage fermentation schedules and maintain sourdough starters and pre-ferments
    • Control mixing, shaping, proofing, and baking processes to ensure consistency and quality
    • Innovate and refine recipes for new and seasonal bread items
  • Pastry & Viennoiserie Production
    • Produce high-quality pastries including croissants, pain au chocolate, danishes, scones, tarts, and muffins
    • Handle laminated dough with precision and consistency
    • Execute patisserie items for display and pre-orders (cakes, dessert bars, etc.)
    • Collaborate with the chef/owner on new pastry development
  • Operational Management
    • Schedule and plan daily/weekly production based on sales, inventory, and seasonal demand
    • Ensure cleanliness, organization, and food safety compliance in the bakery section
    • Maintain equipment and tools in proper working condition
    • Manage ingredient inventory and place orders as needed
  • Cost Control & Recipe Management
    • Accurately calculate and manage recipe costing and portion control to maintain food cost targets
    • Monitor production efficiency and minimize waste
    • Maintain and update recipe sheets, batch records, and costing files
    • Work closely with management to ensure profitability of all baked goods
  • Team Collaboration & Training
    • Work independently and also collaborate with kitchen and FOH teams for smooth service
    • Train junior bakers or assistants on techniques, standards, and safety practices
    • Support kitchen leadership in quality assurance and team development

Requirements:

  • Minimum 5 years of professional baking experience, with strong proficiency in both artisan bread and pastry
  • Strong understanding of sourdough fermentation, hydration, and shaping techniques
  • Skilled in laminated dough and pastry production
  • Proficient in recipe costing, batch scaling, and portion control
  • Experience working in a fast-paced production kitchen or bakery
  • High attention to detail, product quality, and consistency
  • Strong organizational and time management skills
  • Able to work early mornings and weekends
  • Fluent in both English and Thai (spoken and written)
  • Passionate, reliable, and a team player with a positive attitude

Nice-to-Have Skills:

  • Familiarity with gluten-free or alternative grain baking
  • Experience in bakery kitchen setup or scaling production
  • Basic knowledge of bakery POS systems or ordering software
  • Basic design sense for pastry presentation and packaging
